Prepare the Potatoes
Peel the potatoes and cut them into bite-sized cubes.

Fry the Potatoes
Heat the olive oil in a large frying pan over medium heat. Add the potato cubes and fry until golden and crispy, about 15-20 minutes.

Make the Sauce
In a small bowl, mix the mayonnaise with hot sauce to taste. Adjust the heat according to your preference.

Serve the patatas bravas with the spicy mayonnaise on the side.
Spanish Meatballs (Albondigas)

Prepare the Meatball Mixture
In a large bowl, combine ground beef, breadcrumbs, minced garlic, egg, chopped parsley, salt, and black pepper. Mix until well incorporated.

Shape the mixture into small meatballs, about 1 inch in diameter.

In a large skillet, heat a little olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes.

Prepare the Peppers
Preheat your oven to 375°F (190°C). Cut the tops off the mini bell peppers and remove the seeds.

In a mixing bowl, combine cream cheese, chopped chives, garlic powder, salt, and black pepper until smooth and well mixed.
