Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Form into a ball.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Prepare Toppings

    While the dough is rising, prepare the toppings. Slice the fresh mozzarella into thin pieces and set aside.

    Mix Ricotta

    In a bowl, mix the ricotta cheese with black pepper and set aside.

    Prepare Tomato Sauce

    If using a store-bought tomato sauce, heat it gently in a saucepan. If homemade, prepare your favorite tomato sauce recipe.

Assembly and Baking

    Preheat Oven

    Preheat the oven to 475°F (245°C).

    Prepare Baking Dish

    Grease a round or square baking dish with olive oil. Spread garlic oil evenly on the base.

    Layer Toppings

    Spread a layer of tomato sauce on the bottom of the baking dish. Add a layer of mozzarella slices, followed by dollops of the ricotta mixture. Sprinkle grated Grana Padano cheese over the top.

    Add Dough

    Once the dough has risen, gently stretch or roll it out to fit the baking dish. Place the dough over the toppings, tucking it around the edges.

    Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.

    Cool and Serve

    Remove from the oven and let it cool for a few minutes. Carefully invert the pizza onto a serving plate, drizzle with additional tomato sauce, and garnish with fresh basil leaves. Slice and serve.
