Method

Preparing the Salmon

    Season the Salmon

    Preheat your grill or oven to medium-high heat. In a small bowl, mix olive oil, salt, and black pepper. Rub this mixture onto both sides of the Scottish salmon fillets.

    Cook the Salmon

    Place the salmon on the grill or in the oven. Cook for about 4-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from heat and let rest.

Making the Green Goddess Dressing

    Blend the Ingredients

    In a blender, combine the fresh parsley, basil, Greek yogurt, lemon juice, garlic, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Assembling the Dish

    Prepare the Garnish

    In a dry skillet over medium heat, toast the pine nuts until golden and fragrant, about 3-5 minutes. Stir frequently to prevent burning.

    On each plate, place a salmon fillet. Drizzle generously with the green goddess dressing. Sprinkle toasted pine nuts, chopped botija olives, and trout roe on top for garnish. Serve immediately.
