Prepare the Baby Octopus
Clean the baby octopus by removing the beak and innards. Rinse under cold water and pat dry.

Prepare Vegetables
Chop the yellow bell pepper and onion into small, even pieces. Mince the garlic cloves.

Prepare the Broth
In a pot, bring the vegetable broth to a simmer and keep it warm over low heat.
Cooking the Risotto

Sauté the Onion
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Toast the Rice
Stir in the Arborio rice and toast for 1-2 minutes, ensuring the grains are well-coated with oil.

Add White Wine
Pour in the white wine and cook until it has mostly evaporated, stirring continuously.

Add Broth Gradually
Begin adding the warm vegetable broth, one ladle at a time. Stir frequently, allowing the rice to absorb the liquid before adding more. Continue this process for about 18-20 minutes.

Add Baby Octopus
In the last 5 minutes of cooking, add the cleaned baby octopus to the risotto, stirring gently to combine.

Finish the Risotto
Once the rice is creamy and al dente, remove from heat and stir in grated Parmesan cheese. Season with salt and black pepper to taste.

Squeeze fresh lime juice over the risotto before serving. Garnish with additional lime wedges and serve hot.
