    Select the Ribeye

    Choose a high-quality ribeye steak, weighing between 50 to 60 ounces. Ensure it has good marbling for flavor.

    Season the Steak

    In a small bowl, mix together kosher salt, black pepper, garlic powder, and smoked paprika. Rub the olive oil over both sides of the ribeye, then evenly coat with the seasoning mixture.

Cooking

    Preheat the Grill or Oven

    Preheat your grill to high heat (about 450-500°F) or your oven to 400°F if you prefer to roast.

    Cook the Ribeye

    Place the ribeye on the grill or in the oven. If grilling, cook for about 6-8 minutes on each side for medium-rare, or until desired doneness is reached. If roasting, cook for about 25-30 minutes, flipping halfway to ensure even cooking.

    Add Butter and Herbs (Optional)

    During the last few minutes of cooking, add butter and fresh rosemary on top of the steak for extra flavor. Baste with the melted butter.

Resting and Serving

    Rest the Steak

    Remove the ribeye from the grill or oven and let it rest for at least 10-15 minutes. This allows the juices to redistribute.

    Slice and Serve

    Slice the ribeye against the grain into thick slices. Serve with your choice of sides.
