Method
Beef Rib Preparation

Season the Beef Rib
Rub the prime beef rib with olive oil, salt, and black pepper. Let it rest at room temperature for 30 minutes.

Sear the Beef Rib
Preheat your oven to 375°F (190°C). In a hot skillet, sear the beef rib on all sides until browned, about 4-5 minutes per side.

Roast the Beef Rib
Transfer the seared beef rib to the oven and roast for 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare.

Rest the Beef Rib
Remove from the oven and let the beef rib rest for 15 minutes before slicing.

Cook the Beef Cheek
Bring to a simmer over medium heat. Reduce to low, cover, and cook for 3-4 hours until the beef cheek is tender and easily shredded.

Sunchoke Ponzu Demi Preparation

Make Sunchoke Ponzu
In a saucepan, combine sunchokes, soy sauce, rice vinegar, mirin, and sugar. Bring to a boil, then reduce to a simmer and cook until sunchokes are tender, about 15 minutes.

Blend the Sauce
Remove from heat and blend the mixture until smooth. Strain if desired for a smoother sauce.
