To Prepare the Potato Croquettes

    Cook the Potatoes

    Peel and chop the potatoes into quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.

    Mash the Potatoes

    In a large bowl, mash the cooked potatoes until smooth. Allow to cool completely.

    Mix Ingredients

    Once cooled, add the diced ham, shredded gouda, beaten egg, flour, salt, and pepper. Mix until well combined.

    Form Croquettes

    Using your hands, shape the mixture into small oval-shaped croquettes.

    Coat the Croquettes

    Roll each croquette in bread crumbs to coat evenly.

    Fry the Croquettes

    In a large frying pan, heat the vegetable oil over medium heat. Fry the croquettes in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.

To Prepare the Black Garlic Potato Aioli

    Blend Ingredients

    In a food processor, combine the black garlic cloves, mayonnaise, lemon juice, salt, and pepper. Blend until smooth and creamy.

    Serve

    Transfer the aioli to a serving bowl and serve alongside the potato croquettes.
