Crust Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    In a large mixing bowl, combine flour and salt. Once the yeast mixture is frothy, add it to the flour along with olive oil. Mix until a dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Topping Preparation

    Prepare Pomodorini

    Wash and halve the pomodorini. Set aside in a bowl.

    Prepare Garlic

    Peel and thinly slice the garlic cloves.

    Season Toppings

    In the bowl with the pomodorini, add sliced garlic, EVOO, salt, black pepper, and fresh basil. Toss gently to combine.

Pizza Assembly and Cooking

    Preheat Oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

    Shape Dough

    Once risen, punch down the dough and transfer it to a floured surface. Roll or stretch it into a round pizza shape.

    Add Toppings

    Transfer the shaped dough to a pizza peel or baking sheet. Spread the pomodorini mixture evenly over the dough and top with shredded mozzarella cheese.

    Bake Pizza

    Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly.
