Salad Preparation

    Prepare the Lettuce

    Rinse the Little Gem lettuce and mixed greens under cold water. Pat them dry with a paper towel or a salad spinner. Cut the Little Gem lettuce in half lengthwise.

    Assemble the Greens

    In a large salad bowl, combine the Little Gem lettuce halves and the mixed greens. Set aside while you prepare the sunflower seed crumble.

    Blend the Crumble Ingredients

    In a food processor, add the raw sunflower seeds, nutritional yeast, garlic powder, salt, and olive oil. Pulse until the mixture resembles coarse crumbs. Be careful not to over-process; you want some texture.

    Set Aside

    Transfer the sunflower seed crumble to a small bowl and set aside.

Ponzu Vinaigrette Preparation

    Mix the Dressing

    In a small bowl, whisk together the ponzu sauce, rice vinegar, sesame oil, honey (or maple syrup), and black pepper. Adjust the seasoning to taste.

Serving

    Plate the Salad

    To serve, place the salad mixture on plates or in bowls. Sprinkle the sunflower seed crumble generously over the top.
