Method

Grilling the Prawns

    Marinate the Prawns

    In a bowl, combine the prawns, olive oil, salt, black pepper, and lime juice. Mix well and let marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled.

    Grill the Prawns

    Place the marinated prawns on the grill. Grill for 2-3 minutes on each side or until they turn pink and are cooked through. Remove from the grill and set aside.

Making the Green Curry Sauce

    Combine Ingredients

    In a saucepan over medium heat, combine coconut milk, green curry paste, fish sauce, and brown sugar. Stir well to incorporate.

    Simmer the Sauce

    Bring the mixture to a simmer and cook for about 5 minutes, stirring occasionally, until the sauce is slightly thickened. Remove from heat and stir in the chopped basil.

Preparing the Melon and Pickled Fresno

    Prepare the Pickling Solution

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved.

    Pickle the Fresno Chilies

    Add the sliced Fresno chilies to the vinegar mixture and let sit for at least 15 minutes.

    Combine with Melon

    In a serving bowl, combine the diced melon with the pickled Fresno chilies and the pickling liquid. Toss gently and let sit for a few minutes to allow flavors to meld.
