Dough Preparation

    Cook the Potatoes

    Wash and boil the potatoes in salted water until fork-tender, about 20-25 minutes. Drain and let them cool slightly.

    Mash the Potatoes

    Peel the potatoes and mash them in a large bowl until smooth. Allow them to cool completely.

    Make the Dough

    Add the flour, egg, and salt to the mashed potatoes. Mix gently until a dough forms. Be careful not to overwork the dough; it should be soft and slightly sticky.

    Shape the Gnocchi

    Divide the dough into 4 parts. Roll each part into a long rope about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece.

    Bring a large pot of salted water to a boil. Add the gnocchi to the boiling water and cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them and set aside.

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
