Base Preparation

    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, granulated sugar, and salt. Heat over medium heat, stirring constantly until the sugar is fully dissolved and the mixture is hot but not boiling.

    Remove the saucepan from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.

Flavoring the Gelato/Sorbet

    Prepare Flavor Variations

    For fruit flavors, puree the fresh strawberries or mangoes in a blender until smooth. For chocolate, mix in the cocoa powder. For coffee, steep the coffee beans in the milk mixture for an hour, then remove the beans. For mint, steep the fresh mint leaves in the milk mixture for an hour, then strain them out.

    Combine and Chill

    Incorporate the prepared flavoring into the chilled base mixture. Stir well to ensure even distribution of flavor.

Churning and Freezing

    Churn the Mixture

    Pour the flavored mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the churned gelato/sorbet to an airtight container and freeze for at least 4 hours until firm.
