Pasta Preparation

    Cook the Fusilloni

    Bring a large pot of salted water to a boil. Add the fusilloni pasta and cook according to package instructions until al dente, usually around 10-12 minutes. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Sauce Preparation

    Cook the Sausage

    In a large skillet over medium heat, add the olive oil. Once hot, add the spicy Italian sausage, breaking it up into small pieces with a wooden spoon. Cook for about 5-7 minutes until browned and cooked through.

    Add Aromatics

    Add the minced garlic and crushed red pepper flakes to the skillet and sauté for an additional 1-2 minutes until fragrant.

    Combine with Pasta

    Add the drained fusilloni to the skillet with the sausage mixture. Toss to combine, adding reserved pasta water a little at a time to help create a sauce. Season with salt and black pepper to taste.

Finishing Touches

    Incorporate Egg Yolks and Cheese

    Remove the skillet from heat and quickly stir in the egg yolks and grated pecorino di fossa cheese until creamy and well combined. The heat from the pasta will cook the yolks slightly, creating a rich sauce.

    Garnish and Serve

    Serve the fusilloni hot, garnished with chopped fresh parsley and additional pecorino di fossa cheese if desired.
