Preparation of Fries
Frying the Fries

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potatoes in small batches to the hot oil and fry for about 5-7 minutes until golden brown and crispy.

Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and black pepper to taste.
Making Ketchup

Mix Ingredients
In a small bowl, combine the tomato paste, apple cider vinegar, brown sugar, garlic powder, and a pinch of salt.

Adjust Taste
Stir well and adjust seasoning if necessary. Set aside.
Making BBQ Sauce

Combine Ingredients
In a bowl, whisk together the ketchup, Worcestershire sauce, honey, apple cider vinegar, and smoked paprika until well combined.

Taste and Adjust
Taste the sauce and adjust the sweetness or tanginess according to your preference. Set aside.
Making Green Goddess Dressing

In a bowl, combine the mayonnaise, sour cream, chopped parsley, chopped chives, lemon juice, minced garlic, and salt.

Blend Until Smooth
Mix well until smooth and creamy. Adjust salt to taste.
