Prepare the Spiced Pear Syrup
In a small saucepan, combine equal parts of sugar and water (1 cup each), then add 1 cup of peeled and diced ripe pears, 1 tsp of cinnamon, and 1/2 tsp of nutmeg. Bring to a gentle boil, stirring until the sugar dissolves. Reduce heat and let it simmer for about 15 minutes. Once the mixture thickens, strain it through a fine mesh sieve and let it cool. This will yield approximately 1 cup of spiced pear syrup.

Mix the Cocktail
In a cocktail shaker, combine 2 oz of mezcal, 1 oz of spiced pear syrup, 1 oz of Barbera wine, and 0.5 oz of fresh lemon juice. Fill the shaker with ice cubes and shake vigorously for about 15-20 seconds until well chilled.

Strain and Serve
Strain the mixture into a chilled coupe glass or rocks glass filled with a few ice cubes. Ensure you leave enough space for the Barbera wine to float on top.

Float the Wine
Carefully pour 1 oz of Barbera wine over the back of a spoon so it floats on top of the cocktail, creating a beautiful layered effect.
