Prepare the Mojo Citrus Rub
In a blender, combine the garlic cloves, fresh orange juice, fresh lime juice, fresh cilantro, olive oil, ground cumin, dried oregano, salt, and black pepper. Blend until smooth. This will be your mojo citrus rub.

Season the Ribeye
Pat the bone-in ribeye steaks dry with paper towels. Generously apply the mojo citrus rub all over the steaks, ensuring even coverage. Wrap the steaks in plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.

Prepare for Cooking
Remove the ribeye steaks from the refrigerator and allow them to sit at room temperature for about 30 minutes before cooking. This helps in even cooking.

Cook the Ribeye
Place the ribeye steaks on the grill or in the skillet. Sear for about 4-5 minutes on one side until a nice crust forms. Flip the steaks and cook for another 4-5 minutes for medium-rare. Use a meat thermometer to check for doneness (135°F for medium-rare).
