Cabbage Preparation

    Prepare the Cabbage

    Preheat your oven to 400°F (200°C). Cut the Caraflex cabbage into quarters and remove the core.

    Season the Cabbage

    Drizzle the quarters with olive oil, then sprinkle with salt and black pepper. Make sure they are evenly coated.

    Roast the Cabbage

    Place the cabbage quarters on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until the edges are crispy and the center is tender.

Pistachio Topping

    Prepare the Pistachios

    While the cabbage is roasting, chop the shelled pistachios into small pieces. Set aside for garnishing.

Pantaleo Calamansi Bernaise

    Make the Bernaise Sauce

    In a heatproof bowl, whisk together the egg yolks, calamansi juice, and white wine vinegar until well combined.

    Heat the Mixture

    Place the bowl over a pot of simmering water (double boiler) and continue to whisk until the mixture thickens, about 5 minutes.

    Add the Butter

    Slowly drizzle in the melted butter while whisking continuously until fully incorporated and smooth.

    Finish with Cheese and Seasoning

    Remove the bowl from heat. Stir in the grated Pantaleo cheese, chopped chives, salt, and black pepper. Mix until the cheese has melted and the sauce is creamy.

Assembly

    Serve the Dish

    Once the cabbage is roasted, plate the cabbage quarters. Drizzle the Pantaleo calamansi bernaise over the top and sprinkle with chopped pistachios before serving.
