Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water. Cut the bodies into rings and leave the tentacles whole.

Bread the Calamari
Dip each calamari ring and tentacle first into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs. Ensure they are evenly coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce Preparation

Sauté the Garlic
In a saucepan, heat the olive oil over medium heat. Add minced garlic cloves and sauté for about 1 minute until fragrant.

Make the Sauce
Add the canned crushed tomatoes, dried oregano, salt, black pepper, fresh basil leaves, and sugar to the saucepan. Stir to combine.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally.
