Method
Preparing the Bronzino

Season the Fish
Rinse the bronzino under cold water and pat it dry with paper towels. Season the cavity and skin of the fish generously with salt and black pepper.

Making the Saffron Citrus Beurre Blanc

Deglaze with Wine
Pour in the white wine and bring to a simmer. Reduce the liquid by half, which should take about 5-7 minutes.

Add Citrus Juices and Saffron
Stir in the lemon juice, orange juice, and saffron threads. Cook for another 2-3 minutes.

Incorporate Butter
Reduce the heat to low and whisk in the remaining butter, a few cubes at a time, until the sauce is smooth and emulsified. Keep warm until ready to serve.

Garnish with Tomatoes and Almonds
While the fish is cooking, prepare the garnish by halving the sungold tomatoes and chopping the fresh basil. Lightly toast the sliced almonds in a dry skillet over medium heat until golden brown, about 3-5 minutes.

Plate the Dish
Once the bronzino is cooked, place it on a serving platter. Drizzle with the saffron citrus beurre blanc, and top with the halved sungold tomatoes, fresh basil, and toasted almonds. Serve immediately.
