Preparation of Mojo Citrus Rub

    Prepare the Mojo Citrus Rub

    In a blender, combine the garlic cloves, fresh orange juice, fresh lime juice, fresh cilantro, olive oil, cumin, oregano, salt, and black pepper. Blend until smooth.

    Marinate the Ribeye

    Place the bone-in prime ribeye in a large baking dish and pour the mojo citrus rub over it. Ensure the rub is well-coated on all sides of the meat. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight for maximum flavor.

Cooking the Prime Ribeye

    Preheat the Oven

    Preheat your oven to 450°F (232°C).

    Sear the Meat

    Remove the marinated ribeye from the refrigerator and let it sit at room temperature for about 30 minutes. In a large skillet or cast-iron pan over high heat, sear the ribeye for 4-5 minutes on each side until a nice crust forms.

    Roast the Ribeye

    Transfer the seared ribeye to a roasting pan and place it in the preheated oven. Roast for about 15-20 minutes per pound for medium-rare, or until an internal temperature of 125°F (52°C) is reached. Adjust the time based on your desired doneness.

    Rest the Meat

    Once cooked to your desired doneness, remove the ribeye from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes before slicing.

    Slice the ribeye against the grain and serve with additional mojo sauce if desired.
