Make the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add the cold water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Apples
Peel, core, and slice the apples into wedges. In a large skillet, melt 1 tablespoon of unsalted butter over medium heat. Add the brown sugar, chopped nuts, ground cinnamon, and vanilla extract. Stir until the mixture is bubbly and caramelized.

In the skillet with the caramelized mixture, arrange the apple wedges in a circular pattern. Cook for about 10 minutes until the apples are slightly softened. Remove from heat.

Bake the Tatin
Preheat the oven to 375°F (190°C). Place the skillet in the oven and bake for 25-30 minutes, or until the pastry is golden brown.

Cool and Serve
Remove the skillet from the oven and let it cool for about 5 minutes. Carefully invert the tatin onto a serving plate. Serve warm, optionally with whipped cream or vanilla ice cream.
