Preparing the Protein

    Marinate the Chicken

    In a bowl, mix olive oil, salt, black pepper, and paprika. Add the chicken breast and coat it well with the marinade. Let it sit for at least 20 minutes.

    Cook the Chicken

    Heat a skillet over medium heat. Once hot, add the marinated chicken breast and cook for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest for 5 minutes before slicing.

Cooking Rice and Beans

    Cook the Rice

    In a medium saucepan, add the 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes until the rice is tender and water is absorbed.

    Prepare the Beans

    In a small pot, combine the black beans and cumin. Heat over medium until warmed through, stirring occasionally. This should take about 5-7 minutes.

Preparing Fresh Vegetables

    Chop the Vegetables

    Dice the bell pepper and avocado, and halve the cherry tomatoes. Tear or chop the lettuce into bite-sized pieces.

    Prepare the Lime

    Cut the lime into wedges for serving.

Assembling the Waka Bowl

    Layer the Ingredients

    In a large bowl, start by adding a base of rice. Next, layer the black beans, followed by slices of the cooked chicken. Top with the chopped vegetables, and finish with a sprinkle of cilantro and a dollop of sour cream.

    Serve

    Serve the Waka Bowl immediately with lime wedges on the side for an added zing.
