Prepare the Rice
Rinse 1 cup of jasmine rice under cold water until the water runs clear. Combine the rinsed rice with 1.5 cups of water in a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Prepare the Tofu
Drain the firm tofu and wrap it in a clean kitchen towel. Press gently to remove excess moisture. Cut the tofu into 1-inch cubes.

Cook the Tofu
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.

Stir Fry the Vegetables
In the same skillet, add a bit more sesame oil if needed. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Then add the chopped bell pepper, broccoli, carrot, and snap peas. Stir fry for about 5-7 minutes until the vegetables are tender but still crisp.

Combine and Add Sauce
In a small bowl, mix together the soy sauce, cornstarch, and water until smooth. Pour the sauce over the stir-fried vegetables and return the cooked tofu to the skillet. Stir well to combine and cook for another 2-3 minutes until the sauce thickens slightly.

Season with salt and pepper to taste, stirring to combine the flavors.
