For Ugali

Method

To Prepare Ugali

    Boil Water

    In a large pot, bring 4 cups of water to a boil over medium heat.

    Add Corn Flour

    Once the water is boiling, gradually add 2 cups of corn flour while stirring continuously with a wooden spoon.

    Add Salt

    Add 1 teaspoon of salt and continue stirring until the mixture thickens and pulls away from the sides of the pot.

    Cook Ugali

    Reduce the heat to low, cover the pot, and let it cook for about 5-10 minutes. Stir occasionally.

    Shape Ugali

    Once cooked, remove from heat and let it cool slightly. Use wet hands to shape the ugali into a smooth ball or mound.

To Prepare Okra Stew

    Sauté Onions

    In a separate pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes).

    Add Garlic and Ginger

    Add the minced garlic and grated ginger to the onions and cook for another 1-2 minutes until fragrant.

    Add Tomatoes

    Stir in the diced tomatoes and cook until they soften and release their juices (about 5-7 minutes).

    Add Okra

    Add 1 cup of fresh okra to the pot along with 1 cup of water, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir to combine.

    Simmer Stew

    Cover the pot and let the stew simmer for about 10-15 minutes, until the okra is tender.

    Add Fish or Chicken (optional)

    If using, add 1 pound of fish or chicken to the stew during the last 10 minutes of cooking, ensuring it is cooked through.
