Dough Preparation

Mixing the Dough
In a mixing bowl, combine all-purpose flour and salt. Add the oil and mix until the mixture resembles breadcrumbs.

Kneading
Gradually add water, kneading until a smooth and pliable dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

Adding Spices and Peas
Add ginger, green chili, coriander powder, turmeric powder, and garam masala. Stir for a minute, then add the green peas and mashed potatoes. Mix well and season with salt. Cook for an additional 5 minutes. Stir in chopped cilantro and remove from heat.

Rolling the Dough
Divide the dough into equal portions and roll each portion into a thin circle.

Filling the Samosas
Cut the circle in half to create two semi-circles. Take one half, form a cone by folding it, sealing the edge with water. Fill the cone with the potato-pea mixture and seal the top by pinching the edges.

Frying
Heat oil in a deep frying pan. Once hot, carefully drop the samosas in batches and fry until golden brown and crispy. Remove and drain on paper towels.
