Plantain Chips

    Prepare the Plantains

    Peel the green plantains using a sharp knife, taking care to remove all the skin.

    Slice the Plantains

    Using a mandoline slicer or a sharp knife, slice the plantains thinly (about 1/8 inch thick) to ensure they cook evenly.

    Heat the Oil

    In a deep frying pan or a heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Plantains

    Carefully add a handful of plantain slices to the hot oil, frying in batches. Fry for about 3-4 minutes or until they are golden brown and crispy.

    Drain and Season

    Once fried, remove the chips using a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt and paprika.

Dipping Sauce

    Mix the Ingredients

    In a medium bowl, combine mayonnaise, ketchup, lime juice, garlic powder, and chili powder.

    Add salt to taste and mix well until all ingredients are well incorporated and the sauce is smooth.

    Cover the bowl with plastic wrap and refrigerate the sauce for at least 30 minutes to let the flavors meld.
