    Prepare the Plantains

    Peel the green plantains using a sharp knife. Cut off the ends and make a lengthwise slit along the peel, then remove the peel completely.

    Slice the Plantains

    Using a mandoline slicer or a sharp knife, slice the plantains thinly (about 1/8 inch thick) to ensure they are crispy when fried.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the sliced plantains to the hot oil in batches. Fry them until golden brown and crispy, about 3-4 minutes per batch.

    Drain and Season

    Use a slotted spoon to transfer the fried plantain chips to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, paprika, and garlic powder.

    In a bowl, combine the mayonnaise, hot sauce, lime juice, and chopped cilantro. Mix well until smooth.

    Taste the sauce and adjust the heat by adding more hot sauce if desired.

    Transfer the spicy dipping sauce to a serving bowl and serve alongside the crispy plantain chips.
