    Prepare the Ingredients

    Rinse the long-grain parboiled rice under cold water until the water runs clear. Chop the tomatoes, onion, and bell pepper. Mince the garlic and grate the ginger.

    Blend the Tomato Mixture

    In a blender, combine the chopped tomatoes, half of the chopped onion, garlic, and ginger. Blend until smooth. This will be the base sauce for the rice.

    Sauté the Vegetables

    In a large pot, heat the vegetable oil over medium heat. Add the remaining chopped onion and bell pepper, sauté until the onion is translucent (about 5-7 minutes).

    Add the Tomato Mixture

    Pour the blended tomato mixture into the pot. Stir in the bay leaves, salt, black pepper, thyme, and cayenne pepper. Allow to cook for about 10 minutes, stirring occasionally, until the sauce thickens.

    Combine Rice and Broth

    Add the rinsed rice to the pot and stir well to coat the rice in the sauce. Pour in the chicken or vegetable broth and bring to a boil.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed. If using optional proteins, add them halfway through this cooking time.

    Add Optional Ingredients

    If using, stir in green peas and carrots during the last 5 minutes of cooking. Adjust the seasoning to taste.

    Fluff and Serve

    Remove the pot from heat, let it sit for 5 minutes covered. Fluff the rice with a fork, remove bay leaves, and serve warm.
