Cool the Mixture
Remove the saucepan from heat and let the mixture cool to room temperature. This is important to avoid killing the yeast in the next step.

Add Yeast and Lemon Juice
Once the ginger mixture has cooled, add the active dry yeast and lemon juice. Stir gently to combine.

Fermentation
Cover the saucepan with a clean cloth and let it sit at room temperature for 24 hours. This allows the yeast to ferment and create carbonation.
Bottling and Flavoring

Bottling the Ginger Beer
After 24 hours, carefully pour the ginger beer mixture into clean, sterilized bottles, leaving about one inch of space at the top. Use a funnel if necessary.

Add Optional Flavorings
If desired, add lime juice and chopped mint leaves to each bottle for additional flavor.

Seal and Store
Seal the bottles tightly with caps and store them in a cool, dark area for another 3-5 days to allow further fermentation and carbonation.
