Preparation

  1. 1

    Prepare the Goat Meat

Cut the goat meat into bite-sized pieces and rinse under cold water. Pat dry with paper towels.

  2. 2

    Marinate the Meat

In a bowl, mix goat meat with curry powder, ground cumin, ground coriander, turmeric, garam masala, salt, black pepper, and chili powder. Let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Cooking

  1. 3

    Sauté Vegetables

In a large pot or Dutch oven, heat some oil over medium heat. Add diced onion, minced garlic, grated ginger, and diced bell pepper. Sauté until the onion is translucent.

  2. 4

    Add Goat Meat

Add the marinated goat meat to the pot, and cook for about 5-7 minutes until the meat is browned on all sides.

  3. 5

    Add Tomatoes

Chop the tomatoes and add them to the pot. Stir to combine and cook for another 3 minutes.

  4. 6

    Add Liquids

Pour in the coconut milk and water, stirring well to combine all ingredients. Bring to a boil.

  5. 7

    Simmer the Curry

Reduce heat to low, cover the pot, and let it simmer for 1.5 to 2 hours or until the goat meat is tender and the sauce has thickened.

Finishing Touches

  1. 8

    Garnish

Once the curry is ready, remove from heat and stir in chopped fresh cilantro. Serve hot with rice or bread.
