Plantains Preparation

    Peeling the Plantains

    Start by peeling the ripe plantains. Cut off both ends and make a shallow slit along the length of the plantain to easily remove the skin.

    Slicing the Plantains

    Slice the plantains diagonally into 1/2 inch thick pieces to ensure they fry evenly.

    Heating the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of plantain in; if it sizzles, the oil is ready.

    Frying the Plantains

    Carefully add the sliced plantains to the hot oil in batches, making sure not to overcrowd the pan. Fry the plantains for about 2-3 minutes on each side or until they are golden brown and crispy.

    Draining and Salting

    Once fried, remove the plantains with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt to taste while they are still hot.

Spicy Dipping Sauce Preparation

    In a small bowl, combine the mayonnaise, sriracha sauce, lime juice, and garlic powder. Stir well until all ingredients are thoroughly mixed.

    Taste the sauce and adjust the spiciness by adding more sriracha if desired. You can also add a pinch of salt or more lime juice according to preference.
