Preparing the Bread

    Hollowing the Bread

    Take the bread loaf and slice off the top third. Carefully scoop out the inside of the loaf using your fingers or a spoon, creating a hollow cavity while leaving the bottom intact. Set aside the removed bread for serving.

Making the Curry Filling

    Sautéing the Vegetables

    In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Adding Garlic and Ginger

    Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

    Cooking the Vegetables

    Add the diced carrot, potato, and green peas to the skillet. Stir well to combine and cook for 5-7 minutes until the vegetables begin to soften.

    Adding Spices and Coconut Milk

    Sprinkle in the curry powder, salt, and black pepper. Mix thoroughly before pouring in the coconut milk. Stir the mixture well and bring it to a simmer.

    Finishing the Curry

    Allow the curry to simmer for about 15-20 minutes, stirring occasionally, until the vegetables are tender and the sauce has thickened. Stir in the chopped fresh coriander before removing from heat.

Assembling the Bunny Chow

    Filling the Bread

    Spoon the prepared curry filling into the hollowed-out bread loaf until it is generously filled.

    Serving

    Place the top piece back on the filled bread or serve it on the side. Serve the bunny chow warm, garnished with additional coriander if desired.
