Method

Preparing the Nut Filling

    Mix the Nuts

    In a bowl, combine the chopped walnuts, chopped almonds, and cinnamon powder. Mix well and set aside.

Assembling the Baklava

    Prepare the Filo Pastry

    Preheat your oven to 350°F (175°C). Melt the unsalted butter in a small saucepan over low heat.

    Layer the Pastry

    Brush a 9x13 inch baking dish with melted butter. Lay one sheet of filo pastry in the dish and brush the top with more melted butter. Repeat this process, layering and buttering each sheet, until you have about 8 sheets layered.

    Add Nut Filling

    Spread a portion of the nut mixture over the layered filo. Repeat the layering process with 4 more sheets of filo, brushing each with butter, followed by another layer of nuts. Continue until all nuts are used, finishing with 8 layers of filo on top.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking.

Baking the Baklava

    Bake

    Bake in the preheated oven for about 45-50 minutes, until the baklava is crisp and golden brown.

Making the Sweet Syrup

    Prepare the Syrup

    While the baklava is baking, combine the sugar, water, and honey in a saucepan. Bring to a boil, then reduce heat and simmer for about 10 minutes. Remove from heat and stir in vanilla extract. Allow to cool slightly.

Finishing the Baklava

    Add Syrup

    Once the baklava is done baking, remove it from the oven and immediately pour the warm syrup over it, ensuring it seeps into the cuts.

    Cool and Serve

    Allow the baklava to cool completely before serving. Cut through the layers again to ensure pieces can be easily removed.
