1. Soak the Chickpeas
Rinse the dried chickpeas and soak them in water for at least 8 hours or overnight. Drain and rinse before use.
2. Prepare the Mixture
In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Process until the mixture is coarse but holds together when pressed.
3. Form the Balls
If the mixture is too loose, add flour a tablespoon at a time until it binds together. Form the mixture into small balls or patties.
4. Fry the Falafel
Heat oil in a deep pan over medium heat. Carefully drop the falafel balls into the hot oil, frying in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
5. Serve
Serve the falafel hot with tahini sauce and your choice of toppings such as tomatoes, cucumbers, and lettuce.
