Prepare Sweet Potatoes

Peel and dice the sweet potatoes. Boil them in water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

Blend Ingredients

In a large mixing bowl, mash the sweet potatoes. Add the chickpeas, parsley, garlic, cumin, coriander, salt, and pepper. Mix until well combined.

Add Flour

Gradually mix in the flour until the mixture holds together but is not too sticky. If too wet, add a bit more flour.

Shape Falafel

Form the mixture into small balls or patties, about 1.5 inches in diameter.

Heat Oil

In a large skillet, heat olive oil over medium heat. Once hot, add the falafel balls in batches, being careful not to overcrowd the pan.

Cook Falafel

Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Serve warm with tahini sauce or your favorite dipping sauce.
