Prepare the Potatoes

Peel and cut the potatoes into 1-inch cubes. Rinse them under cold water and pat dry with a paper towel.

First Fry

In a large pot, heat olive oil over medium heat. Once hot, add the potatoes in batches and fry until golden brown, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels.

Second Fry

Increase the heat and return the potatoes to the hot oil for a second fry, about 2-3 minutes, until crispy. Drain and season with salt and pepper.

Prepare Whipped Goat Cheese

In a medium bowl, combine goat cheese, a drizzle of olive oil, and a pinch of salt. Whip with a fork until creamy and smooth.

Cook the Bacon

In a skillet, cook bacon until crispy. Remove from the pan and chop into small pieces.

Assemble the Dish

On a serving plate, spread the whipped goat cheese, layer the crispy potatoes on top, and sprinkle with bacon and chopped green onions. Finish with a dusting of paprika.
