Prepare the Lobster
Boil the lobster tails in salted water for about 8-10 minutes until cooked through. Remove from water, let cool, and then remove the meat from the shells. Cut the lobster meat into pieces and insert skewers.

Make the Batter
In a large bowl, mix together cornmeal, all-purpose flour, baking powder, salt, black pepper, and cayenne pepper. In another bowl, whisk together the egg and milk. Combine the wet and dry ingredients, mixing until just combined.

Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C). Make sure there is enough oil to submerge the lobster skewers.

Batter and Fry
Dip each lobster skewer into the batter, ensuring it's fully coated. Carefully place the battered lobster into the hot oil and fry until golden brown, about 3-4 minutes. Remove from oil and drain on paper towels.
