Cook the Pasta
Bring a large pot of salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the shallots and garlic, sautéing until fragrant, about 2 minutes. Add the wild mushrooms and thyme, cooking until the mushrooms are tender and browned, about 5-7 minutes.
Create the Sauce
Pour in the vegetable broth and let it simmer for about 2-3 minutes. Add the heavy cream and mix well. Allow the sauce to thicken slightly, stirring occasionally.
Combine Pasta and Sauce
Add the cooked bucatini to the skillet with the mushroom sauce. Toss to combine, adding reserved pasta water as needed to reach desired consistency. Season with salt and black pepper to taste.
Serve
Plate the pasta and sprinkle with grated Parmesan cheese and chopped parsley. Serve immediately.
