    Prepare the meat mixture

    In a large bowl, combine the ground pork shoulder, brisket, and pork fat. Mix well.

    Add seasonings

    Incorporate the minced garlic, salt, black pepper, paprika, and crushed red pepper flakes into the meat mixture. Mix thoroughly to ensure even distribution of seasonings.

    Add ice water

    Gradually add ice water to the mixture, mixing until the blend is sticky. This helps in binding the sausage.

    Prepare hog casings

    Soak the natural hog casings in warm water for at least 30 minutes before using. Rinse them well to remove excess salt.

    Stuff the casings

    Using a sausage stuffer, carefully fill the casings with the meat mixture, being careful not to overfill. Tie off the ends of the casings securely.

    Smoke the sausages

    Preheat your smoker to 200°F (93°C). Place the sausages in the smoker and smoke for approximately 2-3 hours, or until they reach an internal temperature of 160°F (71°C).
