Prepare the Chicken
In a slow cooker, add the chicken breasts, chopped onion, minced garlic, olive oil, salt, and black pepper. Pour barbecue sauce over the chicken.

Cook the Chicken
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.

Shred the Chicken
Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix it with the remaining barbecue sauce.

Assemble the Sandwich
Toast the hamburger buns if desired. Place a generous scoop of the pulled chicken on the bottom half of each bun. Top with pickles and cover with the other half of the bun.

Serve the pulled chicken sandwiches warm with your choice of side.
