    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and pat them dry. Poke several holes in each potato with a fork, then rub them with butter and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skin is crispy and the inside is tender.

    Prepare the Meats

    While the potatoes are baking, in a saucepan, combine the chopped brisket and pulled pork with the Bar-B-Q sauce over medium heat. Stir occasionally and cook until heated through, about 10-15 minutes.

    Assemble the Loaded Potatoes

    Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes. Carefully slice each potato down the center and push the ends to open it up. Fluff the inside with a fork and season with salt and pepper to taste.
