Fried Catfish Preparation

Marinate the Catfish
In a bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Prepare the Breading
In a separate bowl, mix together the cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper.

Heat the Oil
In a large heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Bread the Catfish
Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are fully coated.

Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil. Fry for about 5-7 minutes or until golden brown and cooked through, turning halfway.

Drain and Serve
Remove the fried catfish from the oil and place on paper towels to drain excess oil. Serve hot with lemon wedges and tartar sauce.
