    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (about 1/4 inch thick).

    Soak the Potatoes

    Place the potato strips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels to remove as much moisture as possible.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). You can use a thermometer for accuracy.

    Fry the Potatoes

    Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 5-7 minutes or until they turn golden brown, stirring occasionally.

    Drain and Season

    Once golden brown, remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Season with salt and black pepper to taste while still hot.
