    Prepare the wings

    Rinse the chicken wings under cold water and pat them dry with paper towels.

    Season the wings

    In a large bowl, mix together the paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken wings and drizzle with olive oil. Toss until the wings are evenly coated.

    Smoke the wings

    Preheat your smoker to 225°F (107°C). Add hickory wood chips to the smoker. Place the seasoned wings on the smoker rack and smoke for about 1.5 hours, or until they reach an internal temperature of 165°F (74°C).

    Fry the wings (optional)

    For a crispy texture, heat oil in a deep fryer or large pot to 375°F (190°C). Fry the smoked wings in batches for 3-5 minutes, or until golden brown and crispy.

    Buffalo Style (optional)

    If serving buffalo style, toss the fried wings in buffalo sauce before serving.

    Serve the wings hot with your choice of dipping sauces and celery sticks.
