Make the Shortbread Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, cream together the unsalted butter and sugar until light and fluffy. Gradually add the flour and salt, mixing until a dough forms. Press the dough into the bottom of a 9-inch pie dish evenly. Bake for 15-20 minutes or until lightly golden. Set aside to cool.

Prepare the Apple Topping
Peel, core, and slice the Granny Smith apples. Toss them in a bowl with lemon juice, brown sugar, and cinnamon until well coated.

Assemble the Pie
Spread the apple mixture evenly over the cooled shortbread crust. Pour the custard filling over the apples, ensuring they are well covered.

Bake in the preheated oven for 30-35 minutes, or until the custard is set and the top is golden.

Allow to cool for at least 20 minutes before slicing. Serve warm or at room temperature.
