    Prepare the Au Jus

    In a medium saucepan over medium heat, melt 1 tablespoon of butter. Add the sliced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute. Pour in the beef broth, season with salt and black pepper, and let it simmer for 10 minutes.

    Assemble the Sandwich

    Heat a skillet over medium heat. Butter one side of each slice of sourdough bread. Place two slices, buttered side down, in the skillet. Layer with sliced brisket and top with pepper jack cheese. Place the remaining slices of bread on top, buttered side up.

    Grill the Sandwich

    Cook until the bottom is golden brown, about 4-5 minutes. Carefully flip the sandwich and grill the other side until golden and the cheese is melted, about another 4-5 minutes.

    Serve

    Cut the sandwiches in half and serve with the warm au jus for dipping.
