Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides.

Sauté Shallots
In a large skillet, heat olive oil over medium heat. Add the sliced shallots and cook until they are translucent, about 3-4 minutes. Remove them from the skillet and set aside.

Brown the Chicken
In the same skillet, add the seasoned chicken breasts and sear them for about 5-6 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Deglaze the Pan
Pour the white wine into the skillet and scrape up any browned bits from the bottom. Bring to a simmer for about 2 minutes.

Braised Chicken
Return the chicken and shallots to the skillet. Add the chicken broth, thyme, and bay leaf. Cover and simmer on low heat for about 25-30 minutes, or until the chicken is cooked through.

Serve
Remove the bay leaf before serving. Serve the braised chicken with the sauce over it.
