Cook the Chicken and Turkey
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the boneless chicken breasts and cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet, let cool, and shred into pieces. In the same skillet, add the ground turkey and cook until browned and cooked through, about 5-6 minutes. Mix in 1/2 cup of barbecue sauce and stir until well combined.

Assemble the Salad
In a large bowl, combine the lettuce, cherry tomatoes, cucumber, red onion, and cheddar cheese. Add the shredded chicken and turkey mixture on top.

Dress the Salad
Drizzle the remaining barbecue sauce over the salad and add the remaining tablespoon of olive oil. Season with salt and black pepper to taste. Toss gently to combine all ingredients.
