Preparation and Cooking

    Prepare the Ribs

    Remove the membrane from the back of the ribs and rinse under cold water. Pat dry with paper towels.

    Make the Dry Rub

    In a bowl, combine brown sugar, paprika, black pepper, salt, garlic powder, onion powder, and cayenne pepper. Mix well.

    Apply the Rub

    Generously apply the dry rub to both sides of the ribs, ensuring they are well coated. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Smoker

    Soak the hickory wood chips in water for at least 30 minutes. Prepare your smoker according to the manufacturer's instructions, ensuring it's preheated to 225°F (107°C).

    Smoke the Ribs

    Place the soaked wood chips in the smoker. Place the ribs on the smoker rack, bone side down, and smoke for about 5 hours, or until the meat is tender and pulls away from the bone.

    Rest and Serve

    Remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve with garlic bread and your choice of two sides.
