Make the Pie Crust
In a large bowl, combine the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water a tablespoon at a time until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.

Prepare the Filling
In a large bowl, toss the sliced apples with lemon juice, granulated sugar, brown sugar, cinnamon, and nutmeg. Let it sit while you roll out the dough.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disk of the chilled dough on a floured surface to fit your pie dish. Transfer it to the dish and fill with the apple mixture. Roll out the second disk of dough and place it over the filling. Trim and crimp the edges to seal. Cut slits in the top crust for steam to escape.

Cool and Serve
Allow the pie to cool on a wire rack for at least 2 hours before slicing. Serve warm or at room temperature.
